I felt so domestic tonight baking cakes. Yep, that's plural. Not 1, but 2 cakes. 1 for a lady at Caleb's office who helped him out a lot the other day and 1 for our small group tomorrow night. This oh-so-domestic wife only had enough eggs for 1 cake. So what do I do? Go ask the neighbors for some. There's a sweet new couple that moved into our neighborhood not long ago, and they were clutch with the eggs tonight. Plus, I got to play with their precious 2 year old daughter. Adorable, I tell ya!
Anyway, the cake is a butter pecan pound cake, and it seems so fall-ish to me. It's pretty much from a box, but it tastes sooo good! And I don't normally boast about anything that I make, but this recipe is from Mama Deanie so we all know it's good.
1/4 cup pecans
1/4 cup powdered sugar
1 box Betty Crocker butter pecan cake mix
3/4 cup oil
4 eggs
1 cup water
1 can coconut pecan icing
Spray pan. (I used a bundt cake pan) Add pecans and sugar to bottom of pan. Use mixer to mix cake mix, oil, eggs, and water. Then stir in icing and mix well. Pour into pan over pecans. Bake 50 minutes at 350.
